what is the physical meaning of pid controller and how i can use it in step 7 300?

For the first part of the question, I suggest you read a few bits of information:
1. an generic explanation od process control with PID loops:

2. a recent discussion on closed-loop control on the forum 

need an explantion about PID on s7 1200

I suggest you take the time to open and read the links from the Ron Beaufort site, they are very instructive for first-time discoverers of PID loops.
There are also many other threads on PID control on the forum, search for them using the Search box at the right of this page.

For the second part of your question, you must look up FB 41 (or SFB 41) in the online help of Simatic manager, or in the document "System and Standard functions.
